Seviyan ki Barfi in 10 minutes/Vermicelli Barfi/Semai ki Mithai

Sevaiyan ki Barfi in 10 minutes with 4 basic ingredients-sevaiyan/vermicelli,nuts,condensed milk and ghee or unsalted butter. The taste and texture remind me of bakhlava. The golden crisp sevaiyan is similar to the flaky phyllo sheets and the nuts and condensed milk complete the package!

This recipe was shared by my friend Nishita, who is an amazing cook. Have shared her Rasa Aloo and Paneer Bhurji recipes before on the blog. Her recipe calls for 3 cups mixed nuts to 1 cup sevaiyan and 1 can of condensed milk. I felt that was way too much nuts and reduced it to 1:1 ratio.

My readers and followers really appreciate my quick,easy and fuss free recipes that require few ingredients and are made quickly. So I decided I would save time by using ready sliced or slivered almonds and just crush them using a rolling pin, instead of chopping 3 types of nuts-major time saver!

Equipment

  • 1 pan
  • 1 spatula
  • 1 8 inch square pan
  • 1 Rolling Pin optional
  • 1 wax paper for easy release
  • 2 tsp oil for greasing pan

Ingredients

  

  • 1 cup Seviyan/vermicelli 150 gms/5 oz/.33 oz,crushed
  • 1 cup almonds chopped,I used blanched sliced almonds
  • 4 tbsp ghee/ 1/2 stick unsalted butter
  • 7 oz condensed milk 1/2 can/200 gms
  • 1/4 tsp green cardamom powder elaichi powder,optional
  • pinch saffron optional

Instructions

 

  • Prepare pan by brushing some oil and lining with wax paper and set aside
  • Crush the seviyan/vermicelli and almonds with hands or with a rolling pin,measure a cup of each, and set aside
  • In a pan, melt the ghee/butter and add the crushed seviyan/vermicelli,cardamom powder and saffron
  • Cook on medium ,stirring continuously for 6-8 minutes,till the seviyan/vermicelli crisps up and turns a shade darker
  • Add the almonds and continue to cook for 2-3 minutes
  • Add condensed milk and continue to cook for a few minutes till it comes together
  • Put the sevaiyan mixture into the prepared pan,cover with wax paper and press with a spatula or any flat surface to get a smooth top
  • Set aside for 15 minutes to set
  • Using a sharp knife, cut into 16 square pieces and garnish with chopped pistachios

Notes

The original recipe calls for equal portion of almonds,pistachios and cashews. Since I wanted the recipe to be made under 10 minutes, I used sliced almonds and crushed them roughly with a rolling pin. This was a big time saver, instead of chopping all the nuts. I have made this recipe with butter and with ghee, they both taste good and I would use whatever is available.Dont cook too long after adding the condensed milk, just till it all combines and comes together. Using waxpaper, makes it so easy to take the barfi out of the pan. Pressing the top of the barfi with a spatula or surface gives clean cut barfis. To make double the quantity, use a full can of condensed milk and set in a 9*13 pan.

Here is the step by step pictorial recipe

In a pan,melt ghee/butter and add seviyan,cardamoms and saffron

Cook on medium, stirring continuously till the seviyan turns crisp and a shade darker

Add almonds an continue to cook for 2-4 minutes

Add condensed milk and continue to cook for few minutes

Put seviyan mixture into pan,cover with wax paper and press down with spatula or any flat surface to get a smooth top

Cool for 15 minutes, remove from pan and cut with a sharp knife
