Paneer Bhurji/Tofu Crumble Stir Fry

A very quick and easy recipe of paneer which is always a hit in every party. With few ingredients and no ginger- garlic to peel and chop, this recipe comes together in no time. This is my daughters favorite sabzi followed by Ma ki dal/dal Makhni and No Onion garlic Dum Aloo.

My daughter made this for a party of 25-30 people at my house recently. She will be going away to college next year and I thought it would help her if she knew how to cook a few things-especially her favorite dishes. Of course I appreciated her help. While she cooked, I took pictures and a video of her cooking. So if a teenager can cook this recipe, you know its an easy dish to prepare!

It was encouraging when all the guests praised her cooking and asked her for the recipe. I could tell she was really enjoying her spotlight moment. I have included below the measurements that you would need to make for a large crowd/party.

Paneer Bhurji without ginger garlic and few ingredients makes it a very easy and delicious recipe to put together for weekdays or large parties.

Servings 4 cups

Ingredients

  

  • 3 cups/300 gms/10 oz of grated paneer tofu crumbles for a vegan option
  • 3/4 cup chopped onion
  • 1 and 1/2 cups chopped tomatoes 3 medium/2 large tomatoes
  • 1/2 cup finely chopped Green Bell Pepper
  • 1/4 cup canned crushed tomato
  • 1/4 cup water
  • 1/4 cup chopped cilantro
  • 1 tsp cumin seeds/jeera
  • 1/2 tsp minced green chilies
  • 1/2 tsp turmeric powder/haldi
  • 1/2 tsp Red Chili Powder/ lal Mirch powder
  • 1 and 1/4 tsp or as per taste
  • 3 tbsp oil

Instructions

 

  • In a pan heat oil, add cumin. When it crackles add the minced green chilies and stir
  • Add onions and cook till pink/light golden
  • Add tomatoes and cook till they turn soft
  • Add bell peppers and all spices(turmeric,red chili powder and salt)
  • Add crushed tomatoes and mix well
  • Add grated paneer/tofu and mix well
  • Add water and bring to a boil
  • Add chopped cilantro and cook for a few minutes till flavors blend in

Notes

For vegan option, use extra firm tofu.You can choose to only use fresh tomatoes or only use canned tomatoes or a mix of both as written in the recipe. Canned tomatoes give good color to the dish. I have made it with just canned tomatoes when I don’t have fresh ones at home or just need to make a quick dish. I don’t find much difference between the two. Add a little more water if you like a bit more curry, but this dish is generally on the thicker side.Makes a great filling for a wrap or quesadilla. If using as a filling for wrap/quesadilla, you can skip the water or add very little.

My measurements for a party of 25-30 people

10 cups/1200 gms/ 2.5 pounds of grated paneer

2 large/3 medium/3 cups of chopped onions

11-12 medium/8-9 large/ 5 cups chopped tomatoes

2 cups chopped Green bell pepper

1 cup chopped cilantro

1 cup canned crushed tomato/tomato sauce

1 cup water

3.5 tsp cumin/jeera

2 tsp crushed green chilies

2 tsp turmeric/haldi

2 tsp Red chili powder/lal mirch

2 tbsp salt

12 tbsp oil

Please note-The paneer bhurji at my party was accompanied by 3-4 appetizers,  Ma ki dal/Dal Makhni, Baingan Aloo, Gobi Matar, raita, rice and rotis. If you are going to have more or less dishes, the quantity may need to be adjusted. Also depends on how many, and how heavy your appetizers are. Ingredients

In a pan heat oil, add cumin, when it crackles, add minced green chilies

Then add chopped onions

Cook the onions till pink/light golden(do not brown)

then add chopped onions

Cook till onions turn soft, then add the chopped bell pepper

Add the dry spices and cook the spices for few minutes

Add canned crushed tomatoes and mix well for few minutes

Add grated paneer/tofu crumbles and mix well

Add water and bring to a boil

    Hi Aanchal, the paneer Burji turned out delicious and was super easy to make.
    I used milk instead of water and used the left over to make wraps in Malaysian parathas the next day ❤️
