Notes

For vegan option, use extra firm tofu. You can choose to only use fresh tomatoes or only use canned tomatoes or a mix of both as written in the recipe. Canned tomatoes give good color to the dish. I have made it with just canned tomatoes when I don't have fresh ones at home or just need to make a quick dish. I don't find much difference between the two. Add a little more water if you like a bit more curry, but this dish is generally on the thicker side.Makes a great filling for a wrap or quesadilla. If using as a filling for wrap/quesadilla, you can skip the water or add very little.
