Non Alcoholic Mimosa/Mimosa Mocktail/Mimosa with Ginger ale

Everyone’s favorite cocktail made without any alcohol. This mocktail mimosa recipe stays chilled till the last drop because we use frozen orange juice cubes instead of orange juice. For a large crowd, make in a large punch bowl. It will not get diluted with ice and stay chilled for a long time.

The classic mimosa recipe is a combination of orange juice and champagne but here we are replacing the champagne with ginger ale. I have used diet ginger ale but if ginger ale is not available, use sprite or any clear carbonated drink. The ginger ale is a really good substitute for champagne and trust me you will not miss the alcohol in these mimosas! The main thing is to make sure the juice cubes will fit into the glass. Use wide rimmed glasses if you are using the traditional square ice tray.

Freezing the raspberry into the ice cube tray just gives a very festive and colorful vibe to the drink. You can also use strawberries. Cut the strawberries in half if they are too big. Mimosas are synonymous with brunches but why limit them to just brunch. They are so easy to put together and can be served for brunch, lunch or dinner. I just loved the orange-red color combination of the raspberries and orange juice and continuing with the same color combination, used some grapefruit slices as garnish. Slices of oranges, some sprigs of mint, strawberries and raspberries will all make good garnishes.

Mimosa mocktail made without champagne. This mimosa recipe stays chilled till the last drop as it uses frozen orange juice cubes.

Equipment

  • 1 ice cube tray
  • 5 champagne flutes
  • 1 small pitcher

Ingredients

  

  • 2 cups orange juice without pulp
  • 24 oz Ginger ale
  • Orange or citrus fruit slices

Instructions

 

  • Place a single whole raspberry in each cavity of the ice cube tray
  • Using pitcher, pour orange juice into the cavities of the ice cube tray
  • Cover with foil and freeze overnight
  • Put few orange juice cubes into each champagne glass
  • Pour the ginger ale over the frozen juice cubes, top with some orange slices and serve immediately

Notes

Its important to see if the ice cubes will fit into the champagne flutes. I had very narrow flutes and the shape of the ice cubes was an oval shape, so they fit into the narrow glasses. Freeze some water into the ice cube trays and test to see if the cubes fit into the glasses, otherwise use wide rimmed glasses. I used raspberries, you can use half cut strawberries. I used diet ginger ale but if gingerale is not available, can use sprite or any clear carbonated drink. For classic mimosa recipe-use champagne.

Here is the step by step pictorial recipe-

Place raspberries in the individual cavities of ice cube tray

Fill the ice cube tray with orange juice and cover and freeze overnight

Remove from freezer

Place 3-4 frozen juice cubes into each glass and pour ginger ale into the glass

Serve immediately
