Cilantro Lime Rice

Perfectly cooked Basmati Rice,flavored with cilantro and lime,is the perfect base to add Black beans, Sofritas(mexican style tofu) or chicken and top with lettuce,pico de gallo,guacamole and salsa to make a filling Burrito bowl.

I ate the burrito bowl at my friend Prenitas house and just loved the fact that it was so easy to put together,tasty and healthy!  Of course, I got the recipes immediately from her and made it when I had some friends over during the holidays.

Its also so easy to customize to your tastes and preferences-I made Mexican style chicken for the meat eaters and Sofritas(tofu) for the vegetarians. Its a great option for vegans as they can omit the cheese and sour cream. Its gluten free as well! Loved by kids, adults and teenagers alike-in my world thats a winner and a keeper!

Cilantro Lime Rice

Servings 3 cups

Ingredients

  

  • 1 cup Basmati Rice
  • 4 cups water
  • 1-2 Bay Leaves
  • 2 tsp oil
  • 1 1/4 tsp salt
  • Juice of 1/2 to 1 Lime/lemon depending upon size
  • 3-4 tbsp finely chopped cilantro

Instructions

 

  • Wash the rice till water runs clear and let the rice soak till we bring the water to a boil in a pot.
  • Bring water,oil,salt and bayleaf to a rapid boil.
  • Add rice gently and continue to boil till rice is cooked.
  • Strain rice in a colander and rinse well to remove starch.
  • Add lime juice and cilantro and mix gently.

Notes

Its important to have extra water while boiling rice to remove all the starch. The starch makes the rice sticky, so if we want every grain to be separate, its important to boil in extra water and drain out the excess water. Test a grain of rice by pressing it between your fingers,if you feel a tiny bit of grain, cook 1-2 minutes extra.Do not over cook.

Ingredients

In a large pot bring water,oil,salt and bayleaf to a rolling boil

Gently add the rice and continue to boil

Cook till rice is done(do not overcook,read notes)

Pour the rice into a colander/strainer and rinse to remove excess starch

Add lime/lemon juice and cilantro

Enjoy with Black Beans,Sofritas,lettuce,salsa,guacamole and pico de gallo
