Chipotle Style Tofu for Burrito Bowl-Sofritas

Mexican flavored tofu adds a great source of protein for the vegetarians whether it be in a taco,burrito,wrapped up in lettuce or as part of a burrito bowl.

I ate this at my friend Prenitas house,it was delicious and filling. I made it a little differently, by making it a little saucy with the addition of tomatoes,onions,cilantro and green chilies. I did ask her for her recipe, which was a bit more on the dry side. I loved her version as well.When I asked her for the recipe,she gave me the directions, but she doesn’t follow any measurements-so I plan to make it her way as well and share the recipe,with measurements, soon with all of you.

For a complete and satisfying meal, add the sofritas to Cilantro Lime Rice and Black Beans. Top with lettuce, guacamole,salsa,pico de gallo and some sour cream and cheese(Omit the sour cream and cheese for a vegan meal).

Some Mexican inspired appetizers that go well with the burrito bowl are- 7 Layer bean dip, Mexican Spirals, Strawberry Kiwi salsa, Restaurant style salsa in minutes and Mango Peach salsa.

Chipotle Style Tofu for Burrito Bowl-Sofritas

Sofritas or Mexican inspired tofu makes a great protein packed addition to Mexican dishes like tacos,lettuce wraps and burrito bowls.

Ingredients

  

  • 14 oz/400 gms of Organic Extra Firm Tofu drained and cut into small pieces(Use paneer if tofu is not available)
  • 1 14 oz/411 gms can Diced Tomatoes or 2 large tomatoes
  • 1 small sized onion chopped
  • 2-4 Green Chilies/jalapenos
  • Few sprigs of cilantro
  • 1 tsp Cumin seeds
  • 1/2 tsp garlic minced
  • 1 tsp taco seasoning or any Mexican Blend of seasoning
  • 1 tsp paprika
  • salt as per taste
  • 3 tbsp oil divided

Instructions

 

  • Place tofu on a paper towel and let the water drain for 10-15 minutes.
  • Meanwhile, blend tomatoes,onions,cilantro and green chilies till smooth.
  • Heat 1 1/2 tbsp oil in a pan and place tofu slices in pan and cook till golden on both sides(refer to pictures below to see two ways of cooking the tofu)
  • Remove tofu and in same pan add the remaining 1 1/2 tbsp oil
  • Add cumin and let it crackle
  • Add garlic and cook for few minutes
  • Add blended tomato/onion mix to the pan.
  • Add taco seasoning,paprika,salt and stir for few minutes
  • Add tofu pieces and salt and cook till the sauce thickens and coats the tofu pieces.
  • Enjoy sofritas on lettuce, as tacos and in a burrito bowl.

Notes

You can use fresh tomatoes instead of the canned ones. Or for a very easy version, skip the blending of tomatoes,onions,jalapenos and cilantro and just use salsa! Dinner will be ready in a jiffy! I do prefer the use of Extra Firm Tofu.

Ingredients

Place tofu/paneer on a paper towel for 10 minutes

Blend Onion,tomatoes,green chilies/jalapenos and cilantro

In a little oil,make the tofu/paneer pieces golden on both sides(two ways of doing this)

In pan, heat oil and let the cumin crackle

Add garlic and stir

Add pureed tomato mix to pan

Add taco seasoning,paprika and salt

Add tofu/paneer pieces and cook till sauce thickens and coats the tofu pieces.

Enjoy with Cilantro Lime Rice,Black Beans,Guacamole, lettuce and Pico de gallo in a Burrito bowl.
