Guacamole with Make Ahead Instructions

Guacamole, with its fresh flavors and amazing health benefits has replaced the Salsa and become the darling of all health conscious people.

After all whats not to love, Avocados with there many nutritional benefits right from having as much potassium as a banana to being high in heart healthy Monounsaturated fats, to being high in fiber and having nutrients that are good for the eye! I love to put Avocados in my salad and sandwiches, and am often left with half an Avocado. This led me to experiment with the best way to keep the remaining half from turning black and getting thrown away. Of course, you should always save the part with the seed in it.

Leaving the seed in the Avocado prolongs the life of the Avocado. Additionally, I would always put lemon juice and wrap it in Clear wrap as tightly as possible, but  what was the surprise element was Onions! Every time I placed a slice of onion on top of the Avocado and then wrapped it in Clear wrap, it lasted longer than If i just did the seed, lemon juice and wrap.

You can see in the picture that after making the Guacamole, I put the seeds back in the bowl and covered it with the wrap. The wrap should touch the Guacamole, not just be placed on the bowl, almost like vacuum packing it, so no air can get in.

This picture is taken after seven hours! I have removed the wrap just before serving and of course will take out the seeds. The color pretty much remained the same. Another make ahead version is to chop the  onions and tomatoes and mix them with lemon juice, garlic and green chilies. Just before serving add the salt,cilantro and Avocados.

Guacamole with make ahead instructions

Course Party Appetizer, Snacks
Cuisine Mexican

Ingredients

  

  • 4 Avocados ripe
  • 2 Roma tomatoes or any kind,chopped fine
  • 1 small Red Onion chopped fine
  • 4 cloves garlic minced(about 2 tsp)
  • 1 tsp Green Chilies minced(optional)
  • Juice of 1-2 limes
  • Cilantro only is consuming right away, if making for later,add just before serving, otherwise it gets too limp.

Instructions

 

  • Chop Onions and tomatoes
  • Add garlic, green chilies and lemon/lime juice
  • Add salt and mix well with fork, mashing it a little, while mixing
  • Slice open the Avocados in half and scoop out flesh(SAVE THE SEEDS)
  • Add Avocados, salt and mix well, we want it to be a little chunky, not smooth like a dip.
  • Enjoy

For serving later

  • Add the saved seeds to the Guacamole
  • Immediately cover with Cling wrap in such a way that the wrap touches the Guacamole, no gap between the Guacamole and wrap. Imagine it being vacuum packed!(See the pictures)
  • Refrigerate, add chopped cilantro just before serving.

Notes

Four things prevent Guacamole from changing color-Lemon juice, Onions, the seeds of the Guacamole themselves,when placed back in prevent it turning black and of course wrapping it in Cling wrap in such a way that there is no air between Guacamole and wrap.Push the wrap down to touch the Guacamole.
