Appe from Dosa Batter

Appe made from dosa batter that has been tempered with Mustard seeds,Urad dal and curry leaves makes excellent use of leftover dosa batter and makes a perfect tea time snack.

If you are like me, you make a large batch of dosa batter and enjoy it the whole week in different forms-dosas, idlis and uttapams. I still had some batter left over,decided to give it a tarka and make lowfat delicious appe out of it as an accompaniment to our tea.

I used left over Daliya Dosa batter(Cracked wheat) though it tastes just as good with Brown Rice Dosa batter or Instant Mixed Dal Dosa-No Rice No Fermentation batter as well.(For a Gluten Free option, please use Brown Rice or Mixed Dal Dosa batter). I served these with coconut chatni, though it would taste just as yum dunked in piping hot sambar(My north Indian take on the traditional south indian staple) or Sarvana Bhavan style Tomato Chatni.

I did use coconut oil to make these appe, and you just have to trust me on this, they tasted awesome! I used Organic cold pressed virgin coconut oil, so the taste and flavor of coconut is very mild. It tastes great made in regular oil, but the coconut oil just takes it to a whole new level! Ingredients

  

  • 1 cup Thick Dosa Batter
  • 2 tbsp cilantro/coriander/dhania chopped
  • 2 tbsp onion chopped
  • 1- 2 green chilies minced(optional)
  • salt as per taste
  • water as needed
  • 1/2 tsp Eno/Fruit salt

For tarka/vaghar

  • 1 tsp oil
  • 1/2 tsp Urad dal
  • 1/2 tsp Mustard seeds/rai
  • Few curry leaves

Instructions

 

For tarka/Vaghar

  • Heat oil in a small pan.
  • Add Urad dal and Mustard seeds and cook till urad dal turns golden in color.
  • Add curry leaves and stir. Remove from heat.

for Appe

  • Heat Appe pan and put a little oil in the cavities
  • To the dosa batter,add prepared tarka,onions,green chilies,cilantro,salt and water as needed.
  • Add Eno and mix well and pour batter into appe pan.
  • COVER and cook on MEDIUM till both sides turn brown.
  • Serve with chatni

Notes

Eno makes the Appe soft. Coconut oil in the Appe pan gives better flavor. Always cover and cook on medium to make sure the center of Appe is cooked.

Here is the step wise pictorial recipe-

Ingredients

In hot oil, add Urad dal and Rai/Mustard seeds, till urad dal turns golden

Add green chilies(optional) and curry leaves and stir for few minutes

Add vaghar/tarka to the dosa batter

Add chopped veggies to the batter and mix well

Add Eno/fruit salt just before making appe in the pan(for soft appe)

Cover and cook on medium till both sides are golden

Enjoy with coconut chatni and a cup of hot tea

    Hi, I follow your recipues …. They are very tempting.
    In the appe made out of Dosa batter what can we put instead of Eno. Where I live we don’t get eno.

      Hi Surbhi,Thanks for following my blog and for the appreciation. Eno makes the Appe soft, but if its not available, try using a pinch of baking soda. Please let me know how it turns out.
