Rajasthani Churma/Choorma Laddoo-No Fry Microwave Recipe

Easy,10 minute recipe of choorma/churma laddoo made in a microwave. It’s as easy as mix everything and microwave and delicious churma ladoo is ready!

The traditional recipe is time consuming as it requires us to make a roti like dough, fry small pieces of the dough, cool and then powder them in a blender. The powdered churma is then mixed with sugar,nuts and ghee and formed into laddoos. This Instant recipe of churma/choorma laddoo eliminates the need to make a dough and to deep fry and then grind them.

Choorma is served in its loose form with the traditional Rajasthani dish Dal Baati. Some variations to this basic recipe is to fry some goond and add it. You could even try using jaggery instead of sugar. My gujarati friends roll the laddoos in poppy seeds.

Cook Time 10 minutes
Total Time 12 minutes

Servings 35 -40 laddoos

Ingredients

  

  • 1 1/4 cup Whole Wheat Flour/Atta
  • 1 1/4 cup fine semolina/sooji/rava
  • 1/2 cup Laddoo Besan/Jada Besan/thick granular gramflour
  • 1 cup sugar
  • 1 cup ghee/2 sticks unsalted butter coconut oil or any oil for a vegan option
  • 1/2 cup chopped almonds
  • 1/8 tsp green cardamom powder/elaichi powder

For Binding and making laddoos

  • 4-6 tbsp COLD MILK
  • 2 tbsp ghee oil for a vegan option

Instructions

 

  • Mix all the ingredients except nuts in a microwave safe bowl
  • Once the ingredients are well mixed, place in microwave for 3 minutes
  • Remove from microwave, mix well and place again for 3 minutes(at this point you should get a nice fragrant smell)
  • Remove from microwave and mix well.
  • Place in microwave for 30 seconds, mix and microwave again at 30 seconds for a total of two minutes (From this point on be careful, as the mixture can burn, that’s why its important to cook it at 30 second intervals)
  • Add nuts, mix well and microwave for an additional minute, pausing and mixing at 30 second intervals
  • If needed microwave for 30 seconds, mix and microwave for an additional 30 seconds
  • Microwaves vary, it can take a few minutes longer in some microwaves. For my microwave 9-10 minutes was plenty. Just proceed with caution and do in increments of 30 seconds to 1 minute as the mixture has enough ghee and can burn.
  • If serving as choorma/churma, its ready!

For Binding and making Laddoos

  • Let mixture cool for 5-7 minutes
  • Add ghee and cold milk so you can handle the mixture with your hands
  • Shape into laddoos

Notes

Loose churma/choorma can be stored at room temperature for 10-15 days. Since we use milk to cool the mixture and shape like laddoos, laddoos should be store in the fridge. Microwave for 20-30 seconds before serving the laddoos. They will taste like freshly made laddoos. Microwaves vary-my microwave has a wattage of 1200 watts.If you have lower wattage microwave, you may have to cook longer and may be able to increase cooking times to 1 minute intervals towards the end.

In a microwave safe bowl mix all the ingredients

Choorma laddos shown below at 0,3.6.8 and 9 minute intervals

After 6 minutes mark, microwave at 30 second interval

Since there is enough ghee in the mixture, it can burn easily

At this point the choorma/churma is ready to be served in its loose form

To bind and shape like laddoos,add cold milk and ghee

Cold milk helps to cool down the mixture a bit so it can be handled
