Microwave Besan Barfi with only 4 ingredients and made in 7 minutes! Trust me there is no difference in taste or texture, it tastes just like the traditional barfi that’s made by roasting besan in ghee on a low flame in a pan.

What is Besan-Its Chickpea flour or gramflour. Its basically ground chana dal and used widely for dishes like pakoras, Kadhi, chillas and dhoklas. They come in 2 varieties- coarse and regular. The coarse one is used widely for laddus and barfi hence also called laddu besan. I have used coarse/laddu besan. The regular besan is the one used in most homes for daily cooking. The only difference between the two is texture. The grainy texture of the coarse besan tastes good in laddu and barfi. If you don’t have coarse besan, the plain besan works just as well.

Can I use unsalted butter instead of ghee– Ghee is clarified butter and in this recipe since we are cooking for only 6-7 minutes, to get the traditional taste, I recommend ghee. If we were to slow cook for a long time in a pan, we can use unsalted butter. I use unsalted butter in Besan Ke Laddoo-Moms Traditional Recipe, all my halwa recipes Moong Dal Ka Halwa, Sooji ka Halwa, Parshad for Navratri, Sheera, Moong Dal Halwa from Besan/No Moong Dal, No Soaking No Grinding. So if you are using the traditional method of slow cooking on a pan, its ok to use butter but for anything that’s going to be cooked in a microwave, ghee is recommended to get the traditional taste.

Can I use granulated sugar instead of powdered sugar- Since we are just mixing the sugar to the warm besan and not making a sugar syrup, using powdered sugar makes the sugar mix in well with the warm besan.

Can I use milk instead of milk powder– You can completely skip the milk powder if you don’t have it. I do not recommend using milk or any liquid in the barfi as it will be difficult to set.

Here is the written recipe followed by the step by step pictorial one-

Microwave Besan Barfi 4 ingredients,7 minutes
Equipment
- 1 large microwave safe bowl
- 1 spatula
- 1 measuring cups and spoons
- 1 8x8 cake pan
- 1 parchment paper/wax paper optional
Ingredients
- 2 cups Laddu Besan/Coarse Besan/ coarse chickpea flour
- 1 cup Ghee/Clarified Butter
- 1 cup powdered sugar
- 1/2 cup Full Fat Milk Powder I used Nido Brand
- 1/2 tsp Elaichi powder/Green Cardamom powder
- 1 tbsp oil for greasing pan
- 1-2 tbsp chopped nuts, rose petals and silver vark for garnish
Instructions
- Grease your Square cake pan, bottom and sides with oil, and put parchment paper in such a way that you have a overhang that lets you pick the barfi for easy release. Brush some oil on the parchment paper as well. Set aside. Putting parchment paper is optional, it helps to get clean pieces
- Powder your sugar in a coffee grinder and set aside
- In a Microwave safe bowl, add ghee and microwave for 45 seconds
- To the melted ghee, add the besan and make a lump free batter. Microwave for 2 minutes
- Remove from microwave, stir well using a spatula. Make sure to stir the sides and scrape the bottom of the bowl as well. Microwave for 1 minute.
- Repeat the above step - mix, microwave for 1 minute. Do for a total of 6 minutes. After 6 minutes, if needed do 1 more minute. By now the besan is golden color and got a fragrant smell
- So microwave for 2 minutes, then +1,+1,+1+1 for 6 minutes. After 6 minutes do another one or two minutes if needed, depending on wattage of microwave. I did for 7 minutes.
- Add elaichi powder, mix, now add the powdered sugar little bit at a time and keep mixing, till all the sugar has mixed in.
- Add the milk powder, now you will see that the mixture turns more solid. Microwave for 45 seconds and mix well
- Transfer the besan mixture into the prepared pan. Tap it on the counter 2-3 times to settle the mixture. Flatten the top with the back of the spatula or spoon. Sprinkle chopped nuts on top and let it cool completely
To Get Clean Pieces
- Once the barfi cools completely, put in the fridge for 30 minutes. Take it out of the refrigerator and you will see that the ghee has solidified. Cut into squares or shape of your choice. Cover with foil and I put it back in the fridge.
- Take out an hour before serving. Top with silver vark, chopped nuts and crushed rose petals. Use the parchment paper overhang to pull the entire barfi out of the pan. You will get perfect clean pieces.
