Microwave Besan Barfi 4 ingredients,7 minutes

Microwave Besan Barfi with only 4 ingredients and made in 7 minutes! Trust me there is no difference in taste or texture, it tastes just like the traditional barfi that's made by roasting besan in ghee on a low flame in a pan.

Equipment

  • 1 large microwave safe bowl
  • 1 spatula
  • 1 measuring cups and spoons
  • 1 8x8 cake pan
  • 1 parchment paper/wax paper optional

Ingredients

  • 2 cups Laddu Besan/Coarse Besan/ coarse chickpea flour
  • 1 cup Ghee/Clarified Butter
  • 1 cup powdered sugar
  • 1/2 cup Full Fat Milk Powder I used Nido Brand
  • 1/2 tsp Elaichi powder/Green Cardamom powder
  • 1 tbsp oil for greasing pan
  • 1-2 tbsp chopped nuts, rose petals and silver vark for garnish

Instructions

  • Grease your Square cake pan, bottom and sides with oil, and put parchment paper in such a way that you have a overhang that lets you pick the barfi for easy release. Brush some oil on the parchment paper as well. Set aside. Putting parchment paper is optional, it helps to get clean pieces
  • Powder your sugar in a coffee grinder and set aside
  • In a Microwave safe bowl, add ghee and microwave for 45 seconds
  • To the melted ghee, add the besan and make a lump free batter. Microwave for 2 minutes
  • Remove from microwave, stir well using a spatula. Make sure to stir the sides and scrape the bottom of the bowl as well. Microwave for 1 minute.
  • Repeat the above step - mix, microwave for 1 minute. Do for a total of 6 minutes. After 6 minutes, if needed do 1 more minute. By now the besan is golden color and got a fragrant smell
  • So microwave for 2 minutes, then +1,+1,+1+1 for 6 minutes. After 6 minutes do another one or two minutes if needed, depending on wattage of microwave. I did for 7 minutes.
  • Add elaichi powder, mix, now add the powdered sugar little bit at a time and keep mixing, till all the sugar has mixed in.
  • Add the milk powder, now you will see that the mixture turns more solid. Microwave for 45 seconds and mix well
  • Transfer the besan mixture into the prepared pan. Tap it on the counter 2-3 times to settle the mixture. Flatten the top with the back of the spatula or spoon. Sprinkle chopped nuts on top and let it cool completely

To Get Clean Pieces

  • Once the barfi cools completely, put in the fridge for 30 minutes. Take it out of the refrigerator and you will see that the ghee has solidified. Cut into squares or shape of your choice. Cover with foil and I put it back in the fridge.
  • Take out an hour before serving. Top with silver vark, chopped nuts and crushed rose petals. Use the parchment paper overhang to pull the entire barfi out of the pan. You will get perfect clean pieces.

Notes

You can use normal besan/ chickpea flour if the coarse/laddu besan is not available. Alternately- remove 1/4 cup of besan and replace with fine semolina/suji. This will get you the coarse texture.
Prepping the pan with parchment paper is optional. It helps to pull the barfi out of the pan without breaking any pieces.
You can skip the milk powder if you wish
