Doodh Peda in 4 minutes/Instant Microwave Peda Recipe

Only four minutes in the microwave and three ingredients needed to make this easy and delicious peda recipe.This is also your basic khoya/mava recipe that can be used in any recipe that calls for khoya/mava. The taste and texture of the peda is just like the ones we get back home in India.

This recipe has been shared by my friend and food enthusiast Anu Tatini. We became friends because of my blog. She had tried a few of my recipes and always shared her feedback either by writing a comment or sharing a picture on my facebook page. She was kind enough to share some of her recipes with me along with pictures and step by step instructions. So thankful to her.

Because microwaves vary, the time to make the pedas also varies. For Anu, it takes her 6 minutes and for me it was done in 3 minutes. I did cook it for 4 minutes but felt the  mixture was a bit crumbly and my pedas were cracking and not smooth. I added a spoonful of heavy whipping cream and mixed it well, that gave me a smooth dough. You can add 1 spoon of milk or malai if you feel the dough is a bit crumbly.

If you are unsure of the microwave wattage, then do 2 minutes first and then keep adding one minute at a time, mixing well after each minute. This gives you more control of the texture of the peda. I have used Fat Free Milk Powder. If you do use full fat milk powder, reduce the quantity of butter. Another recipe that I tried by Anu was the Instant Rabri from Ricotta Cheese/Instant Rabri In oven. This rabri recipe is one of those dump and forget recipes, just put everything in the oven and stir every 10-15 minutes.

Total Time 4 minutes

Servings 24 pedas

Ingredients

  

  • 1 stick/8 tbsp/ 1/2 cup unsalted butter melted(Microwave for 1 minute to melt it)
  • 1 can/14 oz/396 gms Condensed Milk I used Eagle Brand
  • 1 1/3 cup Non Fat Milk Powder I used Carnation Milk Powder
  • 1/4 tsp elaichi powder/crushed green cardamom powder

Instructions

 

  • In a large bowl,mix the melted butter,condensed milk and Non Fat Milk Powder
  • Microwave for 3 minutes and mix well
  • Microwave for 1 more minute and mix well, it should feel like a soft dough when you mix it
  • Add elaichi powder and mix well,if the dough feels crumbly, add a spoonful of cream or milk and mix again
  • While still quite hot, grease palms with ghee and shape into pedas,make a small indentation in the middle
  • Put chopped pistachios in the indentation

Notes

I have used Non fat milk powder, if you use full fat milk powder, you can reduce the amount of butter. Microwaves vary, for me the peda mixture was ready in 3 minutes but for my friend who shared the recipe with me, it takes her 6 minutes. When I cooked it for the 4th minute, I felt the mixture was dry and the peda was crumbling. After 3 minutes, mix well and take a small amount in your hand and try to shape it into a peda. If you are able to shape it and pedas are smooth without cracking/crumbling, then the peda dough is ready. If the pedas are cracked/crumbly, add a tbsp of heavy whipping cream or milk and mix it. It is very important to start shaping the pedas while the mixture is still hot yet can be handled. My friend also uses the empty can of condensed milk for measuring the milk powder. She empties out the condensed milk completely and fills it up with milk powder. Her recipe is 1 stick butter, 1 can condensed milk and the same can of condensed milk emptied and filled with Non fat milk powder. It is exactly 1 1/3 cup of milk powder. You can garnish with nuts,rose petals or saffron.
