Besan Ke Laddoo-Moms Traditional Recipe -Besan/gramflour browned in ghee, topped with nuts and sugar-what’s not to love about it! The smell of besan roasting in ghee/butter wafts into the whole house and takes me back to my childhood. One of my earliest memories is going to my nanajis’ house in Hathras, India and eating Besan ke laddoo made by him. He passed on the recipe to mom and she on to me…Of course in those days there were no written recipes, it was a katori/bowl of this, a handful of that and lots of love and it turned out perfect.

Once when mom visited me in the USA, it was Diwali and we decided to make Besan ke laddoo and Dal ki Pothli, shaped like money bags and give to our friends in boxes. Everyone loved it and I wrote down the recipe in my diary. Since its Ganpati Utsav, I wanted my first food post to be dedicated to Ganesha and his favorite food-Laddu. I also made an Eco Friendly, Bio-degradable Ganesha from whole wheat, and Chocolate, dates and Nut Laddoos for Ganesh Chaturthi. Some of my other eggless desserts are Blueberry Crumble, Kheer in a crockpot, Sooji ka Halwa, and Dudhi ka Halwa.
The good thing about these Besan Ke Laddoo-Moms Traditional Recipe are that they last a really long time. They can last 10-15 days outside and atleast a month in the refrigerator. Since its made with butter/ghee it will solidify,especially during winter months. For that fresh taste, microwave for a few seconds just before serving.So here is my recipe as passed on by mom, I did use unsalted butter instead of ghee though! For a vegan option please use coconut oil or any unflavored oil instead of ghee/butter.

Here is the written recipe followed by the step by step pictorial one-

Besan/Gramflour Ka Laddoo-Indian dessert
Equipment
-
1 pan /kadhai
-
1 spatula
-
1 measuring cups and spoons
Ingredients
- 2 cups Besan/Gramflour/chickpea flour thick mota laddu besan preferred
- 225 grams 2 sticks Unsalted Butter or 1 cup ghee Vegans use coconut oil/or any oil
- 1/2 cup Almonds roughly chopped(optional)
- 1 cup sugar powdered. I used a coffee grinder to powder the sugar
- 1/8 tsp Cardamom powder
Instructions
-
Melt the Butter/Ghee/oil on medium heat and add besan/Gramflour/chickpea flour.

Continue to brown the Besan/gramflour/chickpea flour, stirring intermittently.Its important to get a nice golden color, that means the flour is cooked,otherwise you will get a raw smell.

Add Cardamom powder, nuts(optional) and mix well. Remove from heat.

Let it cool for some time. Once its cool enough to be handled add powdered sugar. You dont want it to be completely cold.

Mix well and press in your fist to make smooth, round laddoos
Notes
Vegans use coconut oil or any oil. If you are allergic to nuts, you can skip it, its optional.
When mom makes it, she first makes bura-which is a process of cooking the sugar, thickening it and then powdering it again. This process of making bura and adding to the laddu ensures no moisture in the sugar and elevates the taste. I simplified the process by adding powdered sugar.
Here is the step by step pictorial recipe-
Ingredients-Besan/Gramflour, sugar, butter,(coconut oil for vegan option) nuts and cardamom powder

Melt butter(coconut oil for vegan option) on Medium heat and add Besan/Gramflour

Mix well and start to brown

Stir and keep browning!

When its a nice golden brown color, add nuts and cardamom powder, remove from heat

When cool enough to be handled, add powdered sugar and mix well

Roll into laddoos and enjoy Besan Ke Laddoo-Moms Traditional Recipe!

I have made these ladoos a bunch of times and I have always got them right! They are melt in the mouth and so delicious! My children love it and you certainly cannot stop at one. Since I have made it so many times, I would suggest take 3/4th of the ghee measurement and then add once you need to put the mix together! Works well for me.
