WholeWheat and Jaggery Eggless Banana Bread

An eggless banana bread made healthier by using whole wheat flour/atta and jaggery/gur. Not only is this bread healthy its also moist and delicious! The chocolate chips and a hint of cinnamon make it a perfect accompaniment to coffee/tea, for breakfast or as dessert!

What a healthy bake this one is-it’s got bananas,wholewheat and no refined sugar! Plus the chocolate chips and cinnamon really add a punch of flavor. This Bread can be made in a square pan or a loaf tin, the bake time will vary depending on the pan,so start checking after 30 minutes.

Before I became a blogger, I had never forayed into egg free baking as my family eats eggs and quite honestly the thought petrified me-what if my cakes will not be soft or moist or not rise! I started with Vegan Chocolate cupcakes and Egg free Red Velvet Cupcakes and since then I have quite a repertoire of Egg Free cakes. Moving on to the recipe, here is the written recipe followed by the step by step pictorial one-

Whole Wheat and Jaggery Eggless Banana Bread

An eggless banana bread made healthier by using whole wheat flour and jaggery/gur. Not only is this bread healthy its also moist and delicious! The chocolate chips and a hint of cinnamon make it a perfect accompaniment to coffee/tea, for breakfast or as dessert!

Ingredients

  

  • 2 large or 3 small overripe bananas
  • 1/2 cup oil any odorless oil, I used canola
  • 1/2 cup milk may need 1-2 additional tbsp
  • 1/4 cup thick yogurt I used Dannon Lowfat plain yogurt
  • 1/2 tsp Vanilla extract
  • 1 1/2 cups Whole wheat Flour/Atta
  • 3/4 cup powdered jaggery/gur
  • 1 tsp Baking powder
  • 1/2 tsp Baking soda
  • 1/2 tsp ground cinnamon
  • pinch of salt
  • 1/4 cup chocolate chips
  • 1 tbsp chopped walnuts

Instructions

 

  • Preheat oven to 350 F
  • Grease and dust a 7 inch round pan(I also like to put parchment/wax paper at bottom for easy release)
  • Warm milk for 30 seconds in a microwave safe bowl. Add the powdered jaggery/gur and mix till the jaggery dissolves.
  • Sieve Wholewheat flour/atta, baking Soda and baking powder
  • Mash the ripe bananas with a fork in a big bowl
  • To the mashed bananas add yogurt,cinnamon,oil and vanilla extract and mix well with a whisk
  • Add the milk/jaggery mix to the above mixture and whisk well
  • Gradually add in the whole wheat flour and fold in gently, do not overmix
  • Add 1-2 tbsp milk if needed to thin out the batter
  • Add 1/8 of the chocolate chips into the mix and give one stir
  • Pour batter into pan and tap the pan a couple of times to remove any air bubbles
  • Top with the remaining chocolate chips, chopped nuts and bake for 35-45 minutes or till toothpick inserted in center comes clean(I baked for approx 40 minutes but kept checking after 35 minutes)
  • Cool in pan for 15-20 minutes
  • Cut only when its completely cool

Notes

The jaggery can be replaced by brown or white sugar. The chocolate chips add a nice chocolatey touch, can increase or decrease quantity as per preference. Can also add a few oats along with walnuts for topping. Walnuts can be replaced by any other nuts of choice or if allergic to nut can be omitted. Can use a loaf pan or a 8 inch pan. Baking times will vary depending on pan size. Start checking with toothpick after 30 minutes if using a different size pan.

Ingredients

Warm milk in microwave safe bowl and mix in the powdered jaggery till jaggery dissolves

Mash two large overripe bananas with a fork

To the mashed bananas add yogurt,cinnamon,oil and vanilla extract and mix well with whisk

Add the jaggery milk to the banana mix

Gradually fold in the wholewheat flour/atta, do not over mix

Add a few more tablespoons of milk, if needed to get the batter to this consistency

Put some chocolate chips into the batter(add more if you like)

Pour batter into pan,put chocolate chips,nuts and some oats(I didn’t use oats) as topping

Enjoy your healthy banana bread for breakfast, with tea/coffee or as dessert

    Hey Aanchal followed your eggless banana nut cake recipe came out really soft only change I made was put nutmeg as I love that flavor and added one cup apple sauce individual cup to cut back on oil I used only 1/4 cup oilcame out same as yours 👍👍
