Rose Kalakand in 4 minutes in Microwave

Only 4 minutes and 4 ingredients to make this quick and easy Rose Kalakand. With only one bowl to clean,its one of the easiest desserts to make. Does not require any food coloring or Rose extract, all the flavor and color are from readymade Rose Sharbat and Rose water.

I played around with the ingredients of my Kalakand recipe and tweaked it a bit to add the Rose sharbat and Rose water for the flavor instead of the traditional cardamom/elaichi and saffron flavor. I have used Rooh Afza brand Rose Sharbat concentrate, readily available in all Indian grocery stores. if you don’t have rose sharbat, use a few drops of red food color along with Rose essence/extract. The color is very pretty and the edible silver warq/leaf on top with chopped nuts make it very attractive.

I had tried the same recipe with some gulkand. Though the taste was nice, The gulkand being a little brown in color, took away from the pretty pink color and the bits and pieces of gulaknd actually made it hard to cut and get clean pieces. Below is the picture of Rose kalakand with gulkand mixed in. As you can see below the kalakand has brown tones and the gulkand makes it hard to cut and get clean square pieces.

Rose kalakand in 4 minutes in Microwave

Cook Time 4 minutes
Total Time 6 minutes

Servings 20 -24 pieces

Ingredients

  

  • 1 1/2 cups Milk Powder Full fat(I used Nido brand)
  • 5 tbsp condensed milk
  • 150 ml heavy whipping cream
  • 2 tbsp plus 1 tsp Rose Syrup/Sherbet/sharbat I used Rooh Afza brand
  • 1-2 tsp Rose water for dabbing on top

For Garnish

  • chopped pistachios
  • Silver warq/edible silver leaf optional
  • Rose petals

Instructions

 

  • Mix all the ingredients in a microwave safe rectangular dish
  • Cook in the microwave for 1 minute, stir it
  • Place again in the microwave for 1 more minute and stir after removing
  • Place again in the microwave for 1 more minute and stir
  • Put it back in the microwave for an additional 30 seconds, mix and again for 30 seconds, if needed(by now it should come together and solidify)
  • (BE VERY CAREFUL, IT MIGHT BOIL OVER. WATCH THE MICROWAVE, IF IT LOOKS LIKE IT MIGHT BOIL OVER,STOP, PAUSE, CONTINUE COOKING)
  • Place wax/parchment paper on top and smoothen the top by rubbing the bottom of a flat bowl,glass or cup
  • Dab some rose water on top of the kalakand and let it rest for 5-7 minutes
  • Use a very sharp knife to cut into squares(Keep dipping knife in very hot water, wiping the knife and cutting to get clean pieces)
  • Garnish with silver warq/edible silver leaf(optional),chopped pistachios and dry rose petals

Notes

The kalakand should be cooked in increments of 1 minute and stirred after each minute. It took me a total of 3 minutes 30 seconds. After 3 minutes use your judgement and cook in increments of 30 seconds. The edges cook first, so its important to stir after each minute.Microwaves vary and it can easily take 1-2 minutes extra.I used a 1.4 liter/6 cups rectangular dish by Anchor Hocking to cook and set the kalakand. If you don’t have a rectangular pan, cook in a microwave safe bowl and once the mix solidifies, transfer quickly to a flat thali or pan. I have used Rooh Afza brand of Rose sharbat, you can use any brand.If You dont have Rose Sharbat, add a few drops of red food color and Rose essence/extract. After cooking the ingredients, can also make laddoos or shape them like modaks. Grease hands and while the dough is warm, quickly shape into laddoos or modaks.

    Hi, can milk powder be replaced with the milk mawa powder found in Indian store?

      Hi Poonam I haven’t tried with mawa powder, so not very sure.
