Roasted Fox Nuts and Peanuts-Vrat ke Makhane

Foxnuts/Makhane and peanuts are roasted in only 2 spoons of oil to make a very healthy and low fat snack. Indians eat foxnuts/makhane in many different way-the most popular being kheer where the makhane are simmered in milk. Its also a popular dish at weddings when its cooked with peas and paneer in a rich,creamy gravy.

This recipe was shared by my friend Hansika, who is my walking buddy and an extremely health conscious person. My mom makes the same snack, but she deep fries almonds and cashews and then mixes it with makhane which are roasted in ghee. So just a few days back I was talking to her and she mentioned this really delicious and healthy snack that she had made to go along with tea. It was healthy for sure with equal portions of almonds,cashew and fox nuts but the thought of deep frying everything, just killed it for me!

Coincidentally, I walk into Hansikas house that evening and she makes me try out this delicious,low fat snack. In fact she had used no oil, just cooking spray! Since I was making this recipe for Navratri, I didn’t want to use cooking spray as it had some ingredients which couldn’t be consumed during fasting, so I used  two spoons of oil instead. I was surprised to learn that an entire cup of foxnuts has only 100 calories and 5 grams of protein. The peanuts, even though high in calories as compared to the foxnuts/makhane had a whopping 14 grams of protein per cup. A few peanuts along with the makhane makes a perfect snack! Its a wonderful snack to take to work for your mid day cravings, much better than eating chips of crackers or some processed food out of a box. Also goes well with drinks in the evening and with your tea or coffee. The snack if versatile, you can add almonds and cashew or any nuts, like my mom does. You can add curry powder, chat masala, herbs,garlic and onion powder-really just about any flavoring that you feel like adding.

Foxnuts/Makhane and peanuts are roasted in only 2 spoons of oil to make a very healthy and low fat snack.

Cook Time 15 minutes
Total Time 16 minutes

Servings 4 cups

Ingredients

  

  • 3 cups Foxnuts/Makhana
  • 1 cup Raw Peanuts
  • 2 tsp oil
  • Kala Namak/Senda Namak/Salt as per taste I used 1/2 tsp
  • 1/4 tsp Black Pepper

Instructions

 

  • Heat pan, add 1 tsp oil and then add the foxnuts
  • Stir on medium low till the foxnuts/makhana change color and turn crisp,set aside
  • In same pan, heat 1 tsp oil and add peanuts
  • Stir till peanuts turn slighty brown and crisp
  • Add salt and pepper and the roasted foxnuts/makhana
  • Mix well for a few minutes till salt and pepper also coats the foxnuts/makhana
  • Cool completely and store in an airtight container, lasts for 2-3 weeks

Notes

Separate the small foxnuts/makhana pieces as they will get done sooner than the larger pieces. Add the salt and pepper to the peanuts, stir and add foxnuts/makhana, this helps the salt and pepper stick to the peanuts and foxnuts/makhana.

Ingredients

In a pan heat oil and add the foxnuts/makhana

Keep stirring and cooking on medium-low till the color changes and they crisp up

Set aside in a bowl

In same pan, add oil and put the peanuts and continue to stir till they become crisp and change color

Add salt and pepper

Add foxnuts/makhana and mix well

Cool completely and store in an air tight container, lasts for 2-3 weeks
