Moong Ki Dal/ Yellow Moong Dal/Moong Dal for Detox/Ayurvedic preparation of Moong Dal

Indian home cooking at its simplest best! Yellow Moong dal which is flavored with just ghee, cumin and chilies(optional). The mildness of this dal makes it a perfect accompaniment to almost any vegetable-be it Bean Aloo, Bhindi Do Pyaza,or  Gobi Matar .

This dal is highly recommended by Ayurveda practitioners because unlike other pulses and lentils it is easily digestible and does not cause gas/ flatulence which is normally associated with most lentils. Though it does provide a whopping 11 grams of protein in 1/4 cup of raw lentil, it also doesn’t have the starch associated with other lentils. This dal cooks in a jiffy and it is possible to over cook it. If you are not used to pressure cooking, its better to cook it in a pot where you can monitor how well done the dal is. This dal with its simple preparation is a regular feature in our home and surprisingly enjoyed by my teenage daughter who loves it as Khichari. Will share recipe of Khichari soon.

Moong dal yellow

Course Lentils/Beans/Dal
Cuisine Indian

Ingredients

  

  • 1 cup Moong dal yellow,washed and soaked for 2-3 hours
  • 2 cups water
  • 1 tsp salt or as per taste
  • 1/2 tsp Haldi/Turmeric

for the Tarka

  • 2 tbsp Ghee
  • 2 chopped Green Chilies optional
  • 1 1/2 tsp jeera/cumin
  • 1/2 tsp Lal mirch/Red Chili powder use less if you prefer

Instructions

 

  • Put dal with salt and turmeric in a pressure cooker.
  • Give one whistle and open in 2-3 minutes( don’t want mushy dal).
  • Heat Ghee in a small pan.
  • Add Jeera/cumin and let it splutter.
  • Add Chopped Green Chilies, stir and add lal mirch powder/Red chili powder and remove immediately.
  • Pour over hot dal.

Notes

You don’t have to soak the dal, Its faster, so I do. The idea is to not make the dal mushy. Quality of dal and pressure cookers vary, so please be careful to not over cook the dal.
If you don’t have a pressure cooker, you may cook in a pot, adjust cooking time and water accordingly.For a milder version,omit the chopped green chilies and Red chili powder. You may substitute paprika for the Red chili powder for some color.

Here is the step by step pictorial recipe-

Ingredients

wash and soak dal for a few hours

Add water salt, turmeric and give one whistle in pressure cooker or cook in an open pan

The dal should be cooked yet not mushy, like the picture below

In a pan heat ghee and add cumin/jeera seeds

Add chopped green chilies and stir(optional)

Add Red chili powder/lal mirch powder(optional) and immediately remove from heat

Pour over Dal

Enjoy a simple meal with Carrot Beet Raita, Bhindi, Gobi Matar or Bean Aloo and Chapati/Roti
