Moong Dal ki Pakori

Moong dal fried and dunked in yogurt and topped with chatnis and sev, is delicious as is or as a side dish. My earliest memories are of mom making these pakoris on Ashtami morning for parshad.

While she always makes the traditional Halwa, Puri and Chana, she always makes a few extra things-Moong dal pakoris,Lobia/Blackeyed peas,Palak Aloo and Luchis and everything is made fresh that morning!

There is a technique to putting the batter in the oil-You scoop up enough batter in your hands and use your thumb to drop small amounts into the oil.I have learnt it by watching her over the years.

If you are unsure of using your hands drop the batter very carefully using a spoon. Also please be careful as the oil might splash while putting the batter.

 

 

 

Moong Dal ki Pakori

Ingredients

  

  • 1 1/2 cups Yellow Moong Dal
  • 2-3 Green Chilies optional
  • 1 inch piece of Ginger optional
  • 48 oz of Yogurt/Dahi/Curd
  • 3 tsp sugar
  • salt as needed
  • Oil for frying

Instructions

 

  • Wash and soak the dal for minimum 5-6 hours
  • Rinse,drain and grind to a smooth batter with as little water as possible
  • Heat oil in a wok/pan/kadhai
  • Whisk the batter well with hands to incorporate some air into batter
  • Put small pakoris in hot oil using your hands or a spoon. Be careful as the oil is hot and it requires practice when using your hands.
  • In a bowl take some water and add salt to it.
  • Put the fried pakoris in the salt water immediately and let it soak for some time.
  • Whisk the yogurt with sugar and salt.
  • Squeeze the pakoris gently between your palms and squeeze out all the water and place the pakoris in whipped yogurt.
  • Top with chatnis and sev

Notes

Please be careful when using your hands to make pakoris as the oil is very hot. There is no salt in the batter, so its important to add salt in the water. The pakoris may look small while frying, but after soaking in water and then in yogurt, they do increase in size.

Here is the step by step pictorial recipe-

Wash and soak moong dal for at least 6 hours

Drain and grind with ginger and green chilies

Grind with as little water as possible,whisk well with hands(Do not add salt)

Put small pakoris in the oil with your hand or a spoon

In a large bowl, take some water and add salt to it. Put fried pakoris in the water

Meanwhile whisk yogurt with salt and sugar

Gently squeeze the pakoris in between both your palms and remove excess water

Add it to the whisked yogurt

Top with Green Chatni, Tamarind Chatni,Sev and chopped Cilantro/Coriander
