Indian Bread Rolls-Air Fried Potato Stuffed Bread Rolls

Crisp,Golden,guilt free Indian Bread Rolls made in only a spoonful of oil in the Air fryer. The spices are cooked slightly before being added to the potatoes, making the potato stuffing delicious.

I grew up eating the deep fried version as a kid, taking it in my lunch box to school and often as an evening snack. As I became more conscious of my health, I completely stopped making these bread rolls because of the number of calories.

 

I like to cook my spices before adding to the potatoes as it just makes it taste so much better. I normally don’t use onions in my filling(tastes great even without onions) as I use the same stuffing for Aloo parathas, tikkis and samosas. I usually make  double the amount of potato stuffing and use half of it to make tikkis the next day. I save the edges of the bread that I cut, in a ziploc bag and add it to the potatoes for tikkis. You can also dry the cut up bread sides/edges for some croutons or crumbs.

Indian Bread Rolls-Air Fried

Equipment

  • 1 Air fryer
  • 1 bowl
  • 1 grater or potato masher
  • 1 bowl
  • 1 pan

Ingredients

  

For stuffing

  • 3 medium sized potatoes boiled,cooled and grated,1 1/2 cups of boiled,grated potatoes
  • 2 tbsp chopped onions optional
  • 1 tsp minced ginger
  • 1/2 tsp green chili
  • 1/2 tsp cumin seeds/jeera
  • 1 tsp coriander powder/dhania powder
  • 1/4 tsp Red chili powder/lal mirch powder
  • pinch of garam masala
  • 1/2 tsp Black salt/Kala namak or regular salt
  • 1 tbsp oil
  • 2 tbsp chopped cilantro/coriander

For Rolls

  • 6 slices of bread
  • Cooking spray or oil for brushing

Instructions

 

For stuffing

  • Heat 1 tbsp oil and add cumin seeds to the hot oil. Let it crackle
  • Add ginger and green chilies and stir
  • Add onions and cook till pink(Adding onions is optional)
  • Add all the dry spices,stir and immediately move from stovetop
  • Add the grated potatoes and mix well
  • Add the chopped cilantro/coriander

For assembling Bread Rolls

  • Take some water in a wide mouthed bowl
  • Trim the sides of the bread and cut in half
  • Dip the bread in water AND IMMEDIATELY take it out
  • Squeeze the bread in between your palms to remove as much water as possible and to make the bread a little bigger
  • Take a tablespoon of filling in your hand,give it an oval shape and place it at an angle on the wet bread
  • Bring opposite sides of the bread together and enclose the filling from all sides

Air Frying the Bread Rolls

  • Preheat Air Fryer at 370F for 5 minutes
  • Spray the bottom of the basket and place the bread rolls. Spray or brush with oil
  • Air Fry at 400F for 5 minutes
  • Spray rolls, flip, spray again and Air Fry for an additional 5-7 minutes at 400F

Notes

I have used whole wheat bread, you can use any soft bread.Try to avoid bread with seeds,grains etc as its difficult to mold. You don’t have to cut the sides of the bread, though it does make it easier to shape without any hard edges. The sides of the bread can be saved in a ziploc bag and used for making tikkis,bread upma,crotons or crumbs.You can use full slices of bread instead of cutting in half, just use double the filling and it will make bigger rolls.

Here is the step by step pictorial recipe-

Ingredients

In a pan, heat oil and cumin. When cumin crackles,add ginger and green chilies,stir

Add onions, when they turn pink,add dry spices,mix and IMMEDIATELY remove from stove

Add boiled,grated potatoes. Mix well. Add chopped cilantro

Remove sides of the bread and cut slices in half

Take half a slice and do a quick dip in a bowl of water

Press between the palms and squeeze out all the water

(The bread will be pliable and also a little bigger now)

Take a small amount of filling and use your fist to give it an oval shape

Place filling on the bread and bring the sides together

Enclose from all sides so the filling is fully covered with the bread from all sides

(Bread is very pliable and can be manipulated to make sure the filling is covered well)

First, preheat Air fryer at 370 F for 5 minutes

Then place the rolls directly on the basket,spray or brush with some oil

Set Air Fryer at 400 F for 5 minutes

After 5 minutes,spray the roll again, flip,spray again and air fry at 400 F for 5 or 7 minutes

    It turned out very well. I loved the recipe. I have instant pot air fryer and it took total 16 minutes – 8×2 on 400 F. It was very crispy and my family loved it
