Badam Katli/Almond Flour Barfi in 3 minutes

Badam Katli made in only 3 minutes in the microwave. Made with almond flour, these burfis need only 2 ingredients-Almonds and sugar! No milk,condensed milk,milk powder and no hassle of sugar syrup.This recipe is Vegan and Gluten Free.

Traditionally the almond/badam katli is made with almonds that are soaked in water, peeled and blended smooth into a paste. A sugar syrup is made and the two are then cooked together. This is a short cut method where I have used almond flour and cooked in a microwave,eliminating the need to make a sugar syrup.

I wanted to keep this recipe vegan and not use any ghee, You can add a tsp of ghee to the dough after it reaches the point where you can easily make a ball of the dough, usually after 2-2 1/2 minutes. Adding cardamoms or rose water is your preference, though the almond burfi usually has no added flavoring.

Technically these barfis should be called Kesar Badam Katli because I have used a generous amount of saffron for the gorgeous yellow color and because I love kesar/saffron. It can be made without the saffron, use plain water for mixing(color will be light cream/off white) and if you want the yellow color without adding saffron, add a drop of edible yellow food color.

Badam Katli/Almond Flour Burfi in 3 minutes

Prep Time 2 minutes
Cook Time 3 minutes
Total Time 5 minutes

Servings 10 -12 burfis/katlis

Ingredients

  

  • 1 cup Blanched Almond Flour finely sifted(I used Blue Diamond brand)
  • 1/2 cup white sugar
  • 1/4-1/2 tsp saffron optional
  • 1/4 cup lukewarm water
  • Silver leaf/warq optional
  • 1/2-1 tsp oil for greasing the parchment paper optional

Instructions

 

  • In a mortar and Pestle,add 1/4 cup lukewarm water and saffron,crush the saffron and set aside
  • In a microwave safe bowl,add almond flour,sugar and saffron infused water(use plain lukewarm water if you don’t want to use saffron) and mix well
  • Microwave for 1 minute and mix
  • Microwave again for another minute and mix well
  • After two minutes, microwave at intervals of 30 seconds
  • The dough is done when you can make a small smooth ball(For me it was done in 3 minutes, microwaves vary in wattage so it could take and additional 30-60 seconds for some)
  • Mix the dough really well with a spatula and bring it together like a dough
  • Grease parchment paper,put the dough on it,roughly shape almond dough into a square,put a few drops of oil if needed and cover with another piece of parchment paper
  • Roll with a rolling pin about 1/8 to 1/4 inch thick(depending on preference)
  • Apply the chandi warq/silver leaf while still warm and use a pizza cutter or sharp knife to cut into diamond shape
  • Store in an air tight container,can last a week outside and about a month in the fridge

Notes

The use of saffron is optional. It imparts a lovely color and flavor to the katlis. If you don’t want to use saffron but still want the yellow color, use a drop of edible yellow food color. Traditionally the almond burfi is made without saffron and is a pale cream/off white color. To get that color, just use plain water. Almond katli does not require any flavoring like cardamom or rose water. After 2 minutes in the microwave, cook at 30 second intervals, mixing after each 30 second rotation. Check to see if you can make a ball of the dough, that’s the point when its ready to be rolled. Add a spoonful of water if you do overcook. Once the dough is ready to be flattened,you can add a tsp of ghee to the dough. I did not add any.

Ingredients

Some microwaves can take longer, depending on wattage

The dough is done when you can make a small smooth ball

At this point you can add 1 tsp ghee or coconut oil(vegan option)

I did not add any ghee or oil

Mix the dough really well with a spatula and bring it together like a dough
Grease parchment paper,put the dough on it,roughly shape almond dough into a square,put a few drops of oil/ghee if needed and cover with another piece of parchment paper

I did dab a few drops of oil on top of the dough before putting the parchment paper

Roll with a rolling pin about 1/8 to 1/4 inch thick(depending on preference)
Apply the chandi warq/silver leaf while still warm and use a pizza cutter or sharp knife to cut into diamond shape
