Aloo Sabzi for Dosa

The best potato filling for your dosas! Perfectly seasoned with Mustard seeds, Urad dal, curry leaves and Sambar powder. Yes, the sambar powder gives the potatoes a unique,yummy taste. Dosa with its potato stuffing is an all time favorite for everyone. And rightfully so, whats not to love about a crisp dosa, stuffed with spicy potatoes, accompanied by cool coconut chatni and hot sambar!  Its a fusion of flavors and textures-crisp, spicy, cool and hot!

This Potato filing is inspired by the famous Dosa place in Kolkata, Jyoti Vihar, which is synonymous with South Indian fare in Kolkata. I love there Butter Masala Dosa, which is served with a huge dollop of homemade white butter on top of the potatoes! Its heavenly!

The filling is a little soft and a little mushy, just the way I like it. The milk/water makes the potatoes a little loose and the sambar powder is the secret ingredient that provides the additional flavor!

Ingredients

  

  • 6 Potatoes boiled and peeled
  • 1 small onion sliced thin
  • 2-3 Green chilies chopped
  • 1 1/2 tsp Mustard seeds/rai
  • 1 1/2 tsp Urad dal
  • 1/2 tsp Cumin/Jeera
  • 1 tsp Sambar Powder
  • 1/2 tsp Turmeric/Haldi slightly less than 1/2 is enough because of the use of sambar powder
  • Salt to taste
  • 1/4 cup Milk or water water for a vegan option
  • Squeeze of lemon/lime
  • Chopped cilantro/coriander/dhania
  • 3 tbsp oil

Instructions

 

  • Cut 4 of the potatoes into small pieces and roughly mash two potatoes.
  • In hot oil first add Mustard seeds, then cumin,followed by Urad dal.
  • Cook all till Urad dal turns golden.
  • Add onions and green chilies and stir for few minutes.
  • Add Sambar powder and Turmeric and stir.
  • Add Potatoes and salt and mix well.
  • Add Milk or water, to loosen the potatoes just a little bit.
  • Top with cilantro and a squeeze of lemon/lime juice/

Notes

Milk or water is optional. I like my potatoes a little soft and mushy,so I add milk. For a vegan option, you may add some water. Use of sambar powder is optional as well but highly recommended.

Ingredients

In hot oil, add cumin, mustard and urad dal

lCook till urad dal turns golden brown

Add sliced onions

Add chopped green chilies

Add curry leaves

Add Sambar powder and turmeric

Add potatoes, salt and mix well

Add milk/water(optional), top with chopped cilantro/coriander/dhania and a squeeze of lemon/lime

Enjoy with Dosa, coconut chatni and sambar.
