Non Alcoholic Mimosa/ Mimosa Mocktail/Mimosa with Gingerale

Mimosa mocktail made without champagne. This mimosa recipe stays chilled till the last drop as it uses frozen orange juice cubes.

Equipment

  • 1 ice cube tray
  • 5 champagne flutes
  • 1 small pitcher

Ingredients
  

  • 2 cups orange juice without pulp
  • 24 oz Ginger ale
  • Orange or citrus fruit slices

Instructions
 

  • Place a single whole raspberry in each cavity of the ice cube tray
  • Using pitcher, pour orange juice into the cavities of the ice cube tray
  • Cover with foil and freeze overnight
  • Put few orange juice cubes into each champagne glass
  • Pour the ginger ale over the frozen juice cubes, top with some orange slices and serve immediately

Notes

Its important to see if the ice cubes will fit into the champagne flutes. I had very narrow flutes and the shape of the ice cubes was an oval shape, so they fit into the narrow glasses. Freeze some water into the ice cube trays and test to see if the cubes fit into the glasses, otherwise use wide rimmed glasses. I used raspberries, you can use half cut strawberries. I used diet ginger ale but if gingerale is not available, can use sprite or any clear carbonated drink. For classic mimosa recipe-use champagne.
