Notes

The kalakand should be cooked in increments of 1 minute and stirred after each minute. It took me a total of 3 minutes 30 seconds. After 3 minutes use your judgement and cook in increments of 30 seconds. The edges cook first, so its important to stir after each minute.Microwaves vary and it can easily take 1-2 minutes extra.I used a 1.4 liter/6 cups rectangular dish by Anchor Hocking to cook and set the kalakand. If you don't have a rectangular pan, cook in a microwave safe bowl and once the mix solidifies, transfer quickly to a flat thali or pan. I have used Rooh Afza brand of Rose sharbat, you can use any brand. If You dont have Rose Sharbat, add a few drops of red food color and Rose essence/extract. After cooking the ingredients, can also make laddoos or shape them like modaks. Grease hands and while the dough is warm, quickly shape into laddoos or modaks.
