Spinach Corn Sandwich

A nutritious, delicious sandwich with packed with the goodness of spinach and corn in a quick white sauce. Flavored with Italian seasoning, garlic and chili flakes, its a flavorful and wholesome sandwich.

Ingredients
  

  • 2 cups chopped spinach firmly packed
  • 1 cup corn canned
  • 2 tbsp Butter
  • 4 tsp All Purpose Flour APF/Maida
  • 1 cup milk
  • 1/2 tsp Italian seasoning
  • 1/2 tsp Red Chili flakes
  • 1/2 tsp Garlic powder or 2-3 gloves of garlic chopped fine
  • 1/4 tsp Black pepper
  • salt as per taste
  • 8 slices of bread any variety
  • 4 slices of cheese optional/1 cup shredded cheese
  • 1 tbsp butter for toasting sandwiches

Instructions
 

  • Heat butter on medium. Once butter melts add garlic powder and stir till golden
  • Add corn and black pepper and stir for 1 minute
  • Add chopped spinach and cook till it wilts,about 2 min
  • Add APF/maida and cook for 3-4 minutes on mediun till flour gets cooked and there is a nice aroma
  • Turn off stove and add milk,Italian seasoning and Red chili flakes and mix well
  • Place pan back on stove and on medium-high cook till the milk/flour thickens. Add salt
  • Let the filling cool
  • Preheat panini grill/sandwich maker or pan
  • Put butter on one side of bread, turn it over and spread the spinach corn filling on the unbuttered side
  • Place a slice of cheese or shredded cheese(this step is optional)
  • Put another slice of bread on top and spread butter and place on grill till golden on both sides
  • Enjoy with soup,salad or your favorite sauce

Notes

Adding additional cheese is completely optional. I have tried with and without cheese, it tastes good both ways. You can use any kind of bread, I made it with Butter bread as that's what I had at home. I have used an indoor electric grill/panini maker. It can be made on a pan/skillet/tava.
