  • Cooking Spray or oil for brushing

Instructions

  • Preheat Air Fryer at 370 F for 5 minutes
  • Mix Spinach, onions, salt, ginger, red chili powder, garam masala and lemon juice in a bowl
  • Use your fingers to mix the ingredients, massaging the spinach so it sweats and leaves water
  • Add the oil and Gram flour/Besan, Rice flour and Baking Soda till it forms a dough(No Water to be used)
  • Spray with cooking spray or brush with oil the Air Fryer basket and put medium size pakoras directly on the basket
  • Spray the pakoras or brush lightly with oil and cook at 370 F for 5 minutes
  • Flip the pakoras, spray or brush lightly with oil and cook again for an additional 5 minutes at 370F

Notes

No water is added to the dough. The spinach is mashed with salt and that makes it release water which is what is used to bind the flours to the spinach and onion. You can add chopped green chilies for a spicier version. The rice Flour is to make the pakoras crisp, but if you don't have rice flour, just increase the amount of gram flour/besan.
