Palak ki Puri/Paratha

Sneak in some healthy,green spinach into puris and parathas to make delicious, crisp puris made of fresh spinach and whole wheat flour.

Ingredients
  

  • 3-4 cups chopped spinach
  • 1/2 to 1 inch piece ginger
  • 1-3 green chilies
  • salt as per taste
  • 1/4 cup water or as needed to grind,don't add too much
  • 2 cups Atta/whole wheat
  • Water as needed for binding dough

Instructions
 

  • Puree Spinach,salt,ginger and Green chilies.
  • Mix with Atta/whole wheat and make into a tight yet pliable dough.
  • Cover and leave aside for minimum 30 minutes.
  • Heat oil and roll out dough into puris/discs
  • Fry till puffy and crisp on both sides.

Notes

You may make parathas of the same dough if you don't want to fry. You can also make the spinach completely smooth, if you like. I like the spinach to show so didn't make a smooth puree out of it.
