Dates Walnut Eggless Vegan Cake

Ingredients
  

  • 2 cups All Purpose Flour/Maida
  • 2 cups water
  • 1 cup Dates/khajoor chopped
  • 1 cup walnuts chopped
  • 3/4 cup sugar
  • 1/2 cup oil
  • 1.5 tsp cinnamon powder
  • 1/4 tsp salt
  • 1 tsp baking powder
  • 2 tsp baking soda

Instructions
 

  • Preheat oven to 350 F/180 C
  • Grease and flour a Loaf pan or a 9 inch pan
  • In a pan mix dates,water,sugar,oil and cinnamon.
  • Bring the mixture to a boil.
  • Turn down the heat and let it simmer for 30 minutes, stirring in between.
  • The mixture will become gelatinous.COOL COMPLETELY.
  • Mix Flour,salt,baking soda and baking powder and sieve through at least 3 times.
  • Whisk in flour mixture,little at a time to the cooled dates mixture.
  • Stir in the chopped walnuts.
  • Pour into the prepared pan and decorate with walnuts,optional.
  • Bake for 45- 50 minutes.

Notes

You could add chocolate as a mix in along with walnuts. The cake tastes better the next day.It can take upto 3 hours for the dates mixture to cool completely. Make the dates mixture a day in advance and keep in fridge, if you don't want to wait that long. Just bring dates mixture to room temperature before using.
