Avocado Oatmeal Appe

Ingredients
  

  • 1 cup Oats finely ground
  • 2 ripe Avocados
  • 1/2 of a small/medium onion chopped fine(approx 1/2 cup)
  • 1/2 cup finely diced Red Peppers or any pepper
  • 1 tsp green chilies minced
  • 1 tsp ginger minced
  • 2 tsp lemon juice
  • 1/2 tsp coriander seeds pounded coarsely
  • salt as per taste
  • Ghee/oil for cooking

Instructions
 

  • To the ground Oatmeal, add chopped onions,peppers,ginger,green chilies and coriander seeds.
  • In another bowl, peel and add Avocados. Add salt and lemon juice and mash well with a fork.
  • Mix the mashed Avocado to the Oatmeal mixture and make into a smooth dough(feels like a soft Aloo tikki dough). DO NOT ADD ANY WATER. The Avocados are used to bind the oatmeal and veggies.
  • Heat the Appe Pan, put a few drops of ghee/oil into the cavities.
  • Use wet hands to make small discs and place in the Appe pan. Cover and cook on medium till brown on one side. Flip over and add ghee/oil and brown the other side as well.
  • Enjoy with Chatni
