Bean Aloo sabzi, Green Beans and Potatoes stirfry

Ingredients
  

  • 2 pounds Green Beans washed and chopped fine
  • 6 small to medium Red potatoes or any kind
  • 1 large or 2 medium Tomatoes
  • 3-4 tbsp Ghee/oil divided
  • 11/2 tsp Cumin/Jeera
  • 1 tsp plus 1/2 tbsp Turmeric/Haldi divided
  • 1 tbsp Red chili Powder optional if you like it mild
  • 1 tbsp Paprika
  • 3 tbsp Coriander/Dhania powder
  • 1/2 tbsp Black salt/Kala Namak optional,You can use regular salt if you want
  • Chopped Cilantro for Garnishing

Instructions
 

  • Wash and chop Green Beans.
  • Wash and dice potatoes
  • In 2 tbsp ghee/oil add Cumin/Jeera, let it crackle.
  • Add 1 tsp Turmeric/Haldi. Stir
  • Add diced potatoes and 1 tsp salt. Mix and cover with lid.
  • When potatoes are cooked halfway, add Green Beans, 1-2 tbsp ghee/oil,all the dry spices including 1/2 tbsp Turmeric/Haldi and stir fry for few minutes.
  • Add chopped tomatoes. Stir well, cover and cook. Keep stirring occasionally. till done.
  • I like to add the stems of the Cilantro in the last few minutes of cooking as it gives a nice flavor and keep the cilantro leaves for garnishing in the end.
