Air Fried Roasted Red Pepper Hummus-Air Fryer Recipe

Roasted Red peppers and roasted garlic provides tonnes of flavor and color to hummus. The Red peppers and garlic are roasted in an Air Fryer, making it so much easier than charring on a grill or oven.

Servings 2 cups

Ingredients
  

  • 2 Large Red Bell Peppers washed and cut in half(Can use a jar of Roasted Red Peppers)
  • 11-12 large cloves of garlic
  • 1 and 1/2 cups boiled chickpeas/chana/garbanzo beans 1 15 oz/425 gms can of chick peas
  • 3 tbsp Tahini
  • 2 tbsp lemon juice
  • 3 tbsp olive oil
  • 2 tsp Red chili powder reduce or omit for milder hummus
  • 1/2 tsp salt or as needed keep in mind, canned chick peas have salt
  • 1 tbsp water if needed for blending

Instructions
 

  • Preheat Air Fryer at 370 F for 5 minutes
  • Remove stems and deseed the peppers
  • Apply oil on the garlic and outer side of peppers and lay flat in air fryer basket and air fry at 400F for 7 minutes
  • Move the peppers and garlic around for even browning and air fry at 400F for 4 minutes(do not flip the peppers)all together 11 minutes
  • Remove the peppers and place in a bowl and cover with plastic wrap or plate and set aside for 15 minutes
  • Remove wrap, by now the peppers are cold enough to handle and the thin charred skin on top comes off easily
  • Cut peppers into strips
  • In blender, add chick peas,tahini,salt, olive oil and lemon juice and blend till smooth
  • Add Red chili powder,roasted garlic and slices of roasted,skinned red peppers and blend till smooth
  • Serve with pita chips and cut veggies

Notes

I have used canned chick peas, but you can soak 1/2 cup chickpeas/chana overnight and cook with some salt. Drain chickpeas when done. The Red chili powder adds a bit of heat and color. If you just want color and no heat, use paprika/kashmiri lal mirch. Roasting the garlic cloves along with the red peppers gives a good nutty,garlicky flavor to the hummus.
