Nolen Gur Sandesh with Ricotta Cheese

With Ricotta cheese as base for this Nolen gur sondesh and a total of only 3 ingredients this is one of the easiest recipes of sandesh. No Chenna/paneer required. Just mix,cook cool and shape into sandesh.

Equipment

  • 1 non stick pan
  • 1 spatula
  • 1 plate

Ingredients
  

  • 1 15 oz/425 gms Ricotta Cheese tub-Full fat
  • 1 cup Nolen Gur/Patali Gur-grated
  • 1/2 cup milk powder
  • 1 tbsp Ghee

Instructions
 

  • In a cold non stick pan put all the ingredients and mix well
  • Turn on the stove and cook on medium for 20 minutes till it leaves the sides of the pan
  • Remove pan from stove
  • Should be a little liquid, leave in pan to cool. Will thicken when it cools.
  • When cool enough to handle, put a dab of ghee in your hands and shape them into small discs/sandesh
  • Put a sprinkling of finely crushed pistachios as garnish

Notes

You can try regular gur/jaggery if Nolen Gur is not available. Can also microwave. If you use the microwave, mix all the ingredients in a micro safe bowl and micro at 2 minute intervals for a total of 6 minutes.So micro for 2 minutes,stir, Micro again for 2 minutes, stir and repeat. After 6 minutes,continue to cook and stir in the microwave at 1 minute intervals for a total of 4 minutes. The mixture will start coming together. The mix will thicken as it cools. Microwaves vary in wattage, so it could take more or less time. My preferred method is on the stovetop though microwave version gives more paneer like texture.
