Cuisine Indian/International/American
Servings 1 kg/ 2.2 pounds

Ingredients

  • 1 kg/2.2 pounds Ginger
  • 1 Baking tray and a spatula
  • 1 freezer bag

Instructions

  • Peel and cut ginger in chunks.
  • Put Ginger in food processor and pulse or just do it in short bursts.
  • Put minced ginger on a baking tray and flatten it out into a thin layer.
  • Use spatula to now run vertical lines through the ginger, making sure the gaps are wide enough.
  • Use spatula to run horizontal lines through the ginger,so that you get squares.
  • Put the baking tray in the freezer for about two to two and a half hours.
  • Remove the frozen ginger and break into squares.
  • Store in a ziploc bag in the freezer.

Notes

No water should be added while mincing. I dont like to make the ginger too fine,so I pulse it. if you like it smoother or finer, you can run the food processor a little longer. Its important to make wide enough demarcations/lines in the ginger so it will be easy to break into squares. Can be frozen for 4-6 months.
