Paneer Pesto Corn Sandwich

A fusion sandwich that combines pesto with all time favorite Paneer,corn and cheese to make one delicious sandwich. I love experimenting with different ingredients and this was a successful experiment!

When you just don’t want to cook an entire meal yet want something easy,satisfying and hot, then the Spinach Veggie Pesto Sandwich on Ciabatta Bread,and Portobello Mushroom Sandwich/Burger are both great options. Combine these sandwiches with a bowl of soup or salad, and it is a complete meal.

I do make these sandwiches when I have friends over for lunch along with my quick and easy Tamatar ka shorba, using canned Tomato soup. The humble soup is indianised with some spices and it tastes just like the homemade soup mom used to make back home. Shhh, no one needs to know its out of a can. They will think you slaved over it all day. Other soups that I make often to go with sandwiches are Cream of Asparagus Soup and Black Bean Soup/Mexican Inspired Soup.

Servings 2 -3 sandwiches

Ingredients

  

  • 1/2 cup/50 gms Paneer grated or crumbled(Can use Tofu instead of paneer)
  • 1/2 cup corn boiled and cooled
  • 1/2 cheese any kind,grated
  • 1/4 cup onion chopped
  • 2-3 green chilies chopped(optional)
  • 2-3 tbsp Pesto I used close to 3 tbsp
  • Dash of Black pepper
  • Salt as needed
  • 4-6 slices of bread
  • Butter as needed

Instructions

 

  • Preheat the Panini press,Grill or Tava.
  • Apply butter on one side of bread and keep aside.
  • Mix all the ingredients and place a slice of bread on the grill or tava,butter side down.
  • Put the stuffing on the bread, top with another slice,butter side up and press down till crisp and brown on both sides.
  • Serve with soup,salad for a complete meal

Notes

If you don’t have Pesto,you can use Green chatni. Start with 1 tbsp of Pesto and add more if needed. Use any kind of cheese, I had Mexican cheese at home so that’s what I used.You can
use Extra firm crumbled tofu instead of Paneer.

Ingredients

Mix everything well

Place buttered side down on grill/tava and put filling on top

Place another slice of bread with butter side up and grill till both sides are crisp and brown

Enjoy with soup and salad
