Oatmeal Avocado Appe

Oatmeal combined with the buttery goodness of avocados yields one of the tastiest and healthiest appetizers. Oatmeal can become boring pretty fast if eaten every morning the same way.

 

I love to experiment with different flavors and ingredients. I really wanted to use Avocados in ways other than dip/guacamole, smoothie, or paratha. Since guacamole has such a creamy texture, I decided to use that to bind the oatmeal and flavor it with very basic spices.

The result was healthy, tasty creamy, soft appe made in a few drops of ghee/oil. I loved the slightly soft green color of the appe that came from the Avocados.

Enjoy it as a healthy breakfast,appetizer or as an accompaniment to your tea. It tastes great as is or with chatni.

 

 

Avocado Oatmeal Appe

Ingredients

  

  • 1 cup Oats finely ground
  • 2 ripe Avocados
  • 1/2 of a small/medium onion chopped fine(approx 1/2 cup)
  • 1/2 cup finely diced Red Peppers or any pepper
  • 1 tsp green chilies minced
  • 1 tsp ginger minced
  • 2 tsp lemon juice
  • 1/2 tsp coriander seeds pounded coarsely
  • salt as per taste
  • Ghee/oil for cooking

Instructions

 

  • To the ground Oatmeal, add chopped onions,peppers,ginger,green chilies and coriander seeds.
  • In another bowl, peel and add Avocados. Add salt and lemon juice and mash well with a fork.
  • Mix the mashed Avocado to the Oatmeal mixture and make into a smooth dough(feels like a soft Aloo tikki dough). DO NOT ADD ANY WATER. The Avocados are used to bind the oatmeal and veggies.
  • Heat the Appe Pan, put a few drops of ghee/oil into the cavities.
  • Use wet hands to make small discs and place in the Appe pan. Cover and cook on medium till brown on one side. Flip over and add ghee/oil and brown the other side as well.
  • Enjoy with Chatni

Ingredients

To the ground oats add onion, peppers, cilantro/coriander,ginger andgreen chilies

Peel and mash the avocados and add salt and lemon juice to it

Pour the mashed avocados over the oats mixture

Mix well and shape dough into small discs and put in the heated appe pan

Cover and cook on medium and brown both sides
