Easy Malai Kulfi-3 Ingredient No churn Recipe

With only 3 ingredients, a blender and 2 minutes, this dessert is a regular at parties at my house. The taste,texture and presentation of this 2 minute kulfi is like the original kulfi made back home in India where the milk is boiled for hours and thickened to get the rich, creamy rabri like texture.

This recipe was shared by my friends Madhu and Poonam. When I first learnt this recipe almost 20 years back, mom was visiting from India and I excitedly asked her to bring me these molds so i could recreate the original Kulfi in the US. In fact, I used to even make home made falooda with cornstarch for the full Kulfi experience and put Rose syrup on top!

The Falooda definitely requires a full post! Will share the recipe of that soon. Just because it is made in two minutes, do not underestimate the taste, it is the same if not better than what is sold in the best restaurants in India. Some other easy summer recipes to try out are

Only 3 ingredients and 2 minutes makes this delicious,creamy, rabri like kulfi without cooking and thickening of milk. Its as easy as blend and freeze!

Equipment

  • 1 blender
  • 14 kulfi molds

Ingredients

  

  • 1 pint/16 oz/473 ml Heavy Whipping cream
  • 1 can Condensed Milk 14 oz/396 gms
  • 1 Can Evaporated Milk 12 oz/354 ml
  • 1/4 tsp Green Cardamom seeds Powdered(optional)
  • Saffron strands optional
  • Chopped Almonds Pistachios and saffron for garnishing

Instructions

 

  • Put Condensed Milk, Evaporated Milk,Cardamom and Saffron in a blender and blend well.
  • Add Whipping cream and pulse or blend on low speed just till everything mixes.
  • Pour mixture into molds or any container with a tight fitting lid or ice cube trays and Freeze overnight.
  • Garnish with nuts, saffron, Falooda or Rose Syrup.

Notes

Whipping Cream should be blended at a low speed as we don’t want it to turn into butter.
Run the mold under running tap water for just a few seconds to unmold.
Keep molds upright in the freezer till the Kulfi sets.

Here is the step by step pictorial recipe-

Ingredients

Pour the Condensed milk, Evaporated milk, Green Cardamom powder/elaichi powder and saffron and blend well

Pulse in the whipping cream.

Pour the mix into kulfi molds or any container with a tight lid or into ice cube trays

Place lids

Try and keep them upright. Use paper to fill in gaps between  molds to keep them upright

garnish with additional saffron, chopped almonds and pistachios.

    What to do if your mixer does not have the option to blend on very low speed

      hi Irene, If you don’t have the option to blend at slow speed, Pulse it a few times. The reason for using slow speed is to make sure the whipping cream doesn’t turn to butter.

    What if I don’t have evaporated milk, can I just boil milk and cool down and blend it with condensed milk ?

      Hi Reva, you can try to boil milk to half it’s original quantity. Idea is to not have water/ moisture in the milk so we don’t get ice crystals in the Kulfi. Please let me know how it turns out. Thanks

        Thanks .. it was great .. i boiled 1 cup of milk to half and brought it down to room temperature and used a egg beater but lot of froth came so again added them in mixie jar and blended.. since I have a small jar did it many times but the taste was good !!!
