Eggless Blueberry Crumble/Cobbler/Pie

Five minutes to put together this 5 ingredient, egg free dessert. Can be assembled ahead of time and baked fresh and served straight out of the oven to guests!

I love this dessert for the taste and ease and has been made by me for many a gathering for almost 20 years now! You can customize it by using any type of cake mix, though I prefer the yellow one. Nuts are optional, though I love the crunch of pecans or walnuts on top. Another favorite dessert that I love to make from cake mix is Chocolate chip pound cake with Ganache icing.

I make this recipe for our Thanksgiving and Christmas get togethers. With so much else being made that day, dessert can be assembled before and is baked while table is being cleaned and dishes being put away. My Hashbrown Casserole is another one of those 5 ingredient-assemble ahead, recipe which is a must during Thanksgiving. Other quick and easy desserts are Cookie Cake/Pizza ,Mango Mousse-No Eggs,Gelatin or Agar Agar   and Dates Walnut Cake- An Eggless Vegan Cake. Enjoy as is or with vanilla icecream, the combination of hot dessert with cold icecream is absolutely irresistible!

5 minutes to put together this Blueberry Crumble/Cobbler that uses dry cake mix for the most delicious and crumbly topping. Can be assembled 1-2 days ahead and baked when needed.

Ingredients

  

  • 2-3 cups Blueberries fresh or frozen(I used 2 3/4 cup fresh)
  • 1 can Crushed Pineapple undrained,20 oz, 1 lb 4 oz, 567 gms
  • 1 cup sugar divided
  • 1 cup/2 sticks/16 tbsp Unsalted Butter
  • 1 Box yellow Cake Mix 15.25 oz/423 gms
  • 1 cup chopped nuts any(I used Pecans)

Instructions

 

  • Preheat oven to 325 F and grease the bottom of a 9*13 pan or any large rectangular pan.
  • Melt the butter in microwave,takes about a minute.
  • Layer the ingredients as follows-
  • Pineapple with juice,Blueberries,3/4 cup sugar,Dry cake mix,melted butter,pecans or any nuts and remaining 1/4 cup sugar.
  • Bake at 325 F for 35- 40 minutes,till slightly brown on top.
  • Serve with any icecream,preferably vanilla.

Notes

I have tried with both fresh and frozen blueberries, and there is no difference in taste. Smoothen the dry cake mix with a spoon to make it level. Nuts are optional. Assemble the ingredients in a pan 1-2 days ahead and place in fridge and bake when needed. If assembled ahead and kept in fridge, you may have to increase baking time, start checking after 40 minutes. Bake till slightly golden brown on top. Ovens vary, so baking times can vary as well. Blueberry cobbler is done when the top is slightly golden brown.

Ingredients

Melt Butter

Empty out the pineapple can, with the juice, into the pan

Spread the blueberries on top of the pineapple

Sprinkle 3/4 cup sugar on top of the blueberries

Spread the dry cake mix on top of blueberries and level with the back of a spoon

Pour melted butter on top of the cake mix

Sprinkle chopped nuts and 1/4 cup sugar

Bake for 35-40 minutes

 

Enjoy with ice cream or whipped cream

    What is this yellow cake mix ? Can I make this st home ?
    I live in singapore but I haven’t seen yellow cake mix. Can u pls help?

      Hi Sonali, Cake mix is a ready mix that has all the dry ingredients for making a cake,all we need to do is add eggs,water,oil/butter. They come in different flavors like chocolate,Red velvet,Yellow(which is the basic cake mix) etc. They are usually available in the baking aisle and are extremely popular here because of the ease involved.
